Apple Cinnamon Pull-Apart Bread

  • 2 ½ cups all-purpose flour (300 grams)
  • ¼ cup granulated sugar (50 grams)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • ½ teaspoon salt (2.5 grams)
  • ½ cup milk (120 ml)
  • ¼ cup unsalted butter, melted (60 grams)
  • 2 large eggs
  • 2 medium-sized apples, peeled, cored, and diced
  • ½ cup brown sugar (100 grams)
  • 1 teaspoon ground cinnamon (2 grams)
  • ¼ cup unsalted butter, melted (60 grams)
  • ½ cup powdered sugar (60 grams)
  • 1-2 tablespoons milk (15-30 ml)
  • 1 teaspoon vanilla extract (5 ml)

Cooking Instructions

  1. In a large mixing bowl, combine the flour, granulated sugar, yeast, and salt. Mix well.
  2. In a small saucepan, heat the milk until warm (about 110°F/43°C). Add the melted butter to the warm milk and stir.
  3. Pour the milk mixture into the dry ingredients. Add the eggs. Mix until a soft dough forms.
  4. Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. While the dough is rising, prepare the apple cinnamon filling. In a small bowl, combine the diced apples, brown sugar, and ground cinnamon. Mix well.
  7. Punch down the risen dough and transfer it to a lightly floured surface. Roll it out into a rectangle about 12×16 inches (30×40 cm).
  8. Brush the melted butter over the entire surface of the dough. Sprinkle the apple cinnamon filling evenly over the dough.
  9. Cut the dough into 6 equal strips vertically. Stack the strips on top of each other and then cut the stack into 6 equal squares.
  10. Grease a loaf pan and place the squares into the pan, cut side up, stacking them on top of each other.
  11. Cover the loaf pan with a clean kitchen towel and let it rise for an additional 30 minutes.
  12. Preheat the oven to 350°F (180°C). Bake the bread for 35-40 minutes or until golden brown and cooked through.
  13. Remove the bread from the oven and let it cool in the pan for 10 minutes. Transfer to a wire rack to cool completely.
  14. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the glaze. Drizzle the glaze over the cooled bread.
