Servings: 4

  • 2 pounds sweet potatoes, peeled and cut into chunks (907 grams)
  • 4 tablespoons unsalted butter (56 grams)
  • 6-8 fresh sage leaves, finely chopped
  • 1/2 cup milk (120 ml)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cooking Instructions

  1. In a large pot, add the sweet potato chunks and cover with water. Bring to a boil over medium-high heat and cook until the sweet potatoes are tender when pierced with a fork, about 15-20 minutes.
  2. While the sweet potatoes are cooking, melt the butter in a small saucepan over medium heat. Cook the butter until it turns a golden brown color and has a nutty aroma, about 5-7 minutes. Be sure to stir occasionally to prevent burning. Once browned, remove from heat and add the chopped sage leaves. Let the sage infuse in the butter for a few minutes.
  3. Drain the cooked sweet potatoes and return them to the pot. Use a potato masher or fork to mash the sweet potatoes until smooth.
  4. Pour the brown butter and sage mixture over the mashed sweet potatoes. Add the milk, salt, and black pepper. Stir well to combine all the ingredients and achieve a creamy consistency.
  5. Taste and adjust the seasoning if needed. Add more salt or pepper according to your preference.
  6. Transfer the mashed sweet potatoes to a serving dish and garnish with a few fresh sage leaves. Serve hot and enjoy!
