  • 9 lasagna noodles
  • 1 butternut squash, peeled, seeded, and cut into small cubes (about 4 cups or 600g)
  • 2 cups (500g) fresh spinach leaves
  • 1 cup (240g) ricotta cheese
  • 1 cup (100g) grated Parmesan cheese
  • 1 cup (115g) shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups (480ml) marinara sauce

Cooking Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat a tablespoon of olive oil over medium heat. Add the butternut squash cubes and sauté until they are tender, about 10 minutes. Set aside.
  4. In the same skillet, add the spinach leaves and cook until wilted, about 2 minutes. Remove from heat and set aside.
  5. In a medium bowl, combine the ricotta cheese, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix well.
  6. Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
  7. Place 3 lasagna noodles on top of the sauce, slightly overlapping them.
  8. Spread half of the ricotta cheese mixture over the noodles, followed by half of the butternut squash cubes, half of the spinach, and a third of the Parmesan and mozzarella cheese.
  9. Repeat the layers starting with the marinara sauce, followed by the remaining noodles, ricotta cheese mixture, butternut squash cubes, spinach, and another third of the Parmesan and mozzarella cheese.
  10. Finish with a final layer of noodles, marinara sauce, and the remaining Parmesan and mozzarella cheese.
  11. Cover the baking dish with aluminum foil and bake for 40 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
  12. Allow the lasagna to cool for a few minutes before serving.
