  • 1 medium butternut squash, peeled, seeded, and cut into 1-inch cubes (about 4 cups) (907g)
  • 1 tablespoon olive oil (15ml)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken or vegetable broth (120ml)
  • 1 cup shredded cheddar cheese (113g)
  • 1/2 cup grated Parmesan cheese (56g)
  • 1/2 cup panko breadcrumbs (30g)
  • 2 tablespoons unsalted butter, melted (28g)
  • Fresh parsley, chopped (for garnish)

Cooking Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent, about 3-4 minutes.
  3. Add the cubed butternut squash, dried thyme, dried sage, salt, and black pepper to the skillet. Cook for another 5 minutes, stirring occasionally, until the squash is slightly tender.
  4. Pour the chicken or vegetable broth into the skillet and bring to a simmer. Cover the skillet and cook for an additional 10 minutes, or until the squash is fully cooked and easily mashed with a fork.
  5. Transfer the cooked squash mixture to the prepared baking dish. Spread it evenly in the dish.
  6. In a small bowl, combine the shredded cheddar cheese, grated Parmesan cheese, panko breadcrumbs, and melted butter. Mix well until the breadcrumbs are evenly coated with the melted butter.
  7. Sprinkle the breadcrumb mixture over the butternut squash in the baking dish.
  8. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbling around the edges.
  9. Once cooked, remove the casserole from the oven and let it cool for a few minutes. Garnish with fresh chopped parsley before serving.
