  • 1/2 cup dry white wine
  • 4 cups vegetable or chicken broth

  • Fresh parsley, chopped, for garnish

Cooking Instructions

  1. In a large skillet or sauté pan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
  2. Add the cubed butternut squash to the pan and cook for about 5 minutes, until it starts to soften.
  3. Stir in the Arborio rice and cook for another 2 minutes, until the rice is well coated with the oil and begins to turn slightly translucent.
  4. Pour in the white wine and stir continuously until the wine is absorbed by the rice.
  5. Gradually add the vegetable or chicken broth, about 1/2 cup at a time, stirring constantly and allowing the rice to absorb the liquid before adding more. Continue this process until the rice is tender and creamy, which should take about 20-25 minutes.
  6. Stir in the grated Parmesan cheese and season with salt and pepper to taste. Mix well until the cheese is melted and fully incorporated into the risotto.
  7. Remove from heat and let the risotto rest for a few minutes before serving.
