  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 ounces cooked breakfast sausage, crumbled (113g)
  • 4 large eggs
  • 1/4 cup chopped fresh parsley, for garnish (15g)

Cooking Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the cauliflower florets in a food processor and pulse until they resemble rice-like grains.
  3. Transfer the cauliflower "rice" to a microwave-safe bowl and microwave on high for 5 minutes.
  4. Once the cauliflower has cooled slightly, place it in a clean kitchen towel and squeeze out any excess moisture.
  5. In a large mixing bowl, combine the cauliflower, mozzarella cheese, Parmesan cheese, dried oregano, garlic powder, salt, and black pepper. Mix well.
  6. Line a baking sheet with parchment paper and press the cauliflower mixture into a 10-inch (25cm) circle, about 1/4 inch (0.6cm) thick.
  7. Bake the cauliflower crust in the preheated oven for 20 minutes, or until golden and crispy.
  8. While the crust is baking, cook the breakfast sausage in a skillet over medium heat until browned and cooked through. Set aside.
  9. Remove the cauliflower crust from the oven and carefully crack the eggs onto the crust, evenly spaced.
  10. Return the pizza to the oven and bake for an additional 5-7 minutes, or until the egg whites are set but the yolks are still slightly runny.
