  • 1 carrot, diced
  • 1/2 cup frozen peas (75g)
  • 1/2 cup diced pineapple (75g)
  • 1/2 cup cashews, chopped (65g)
  • 3 tablespoons gluten-free soy sauce (45ml)
  • 2 tablespoons sesame oil (30ml)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Cooking Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium heat.
  2. Add the diced onion and minced garlic to the skillet and sauté until the onion becomes translucent, about 2-3 minutes.
  3. Add the diced carrot to the skillet and cook for an additional 2 minutes, until slightly tender.
  4. Increase the heat to medium-high and add the grated cauliflower to the skillet. Stir-fry for about 5 minutes, until the cauliflower is cooked through but still slightly crisp.
