  • 2 cups cauliflower rice (340g)
  • 1 tablespoon rice vinegar (15ml)
  • 1 teaspoon sugar (5g)
  • 1/2 teaspoon salt (2.5g)
  • 4 nori sheets
  • 1 avocado, sliced
  • 1/2 cucumber, julienned
  • 1/2 carrot, julienned
  • 4 ounces smoked salmon, thinly sliced (113g)
  • Spicy Mayo:
    • 1/4 cup mayonnaise (60g)
    • 1 tablespoon sriracha sauce (15ml)
    • 1 teaspoon soy sauce (5ml)

Cooking Instructions

  1. In a large mixing bowl, combine the cauliflower rice, rice vinegar, sugar, and salt. Mix well until the cauliflower rice is well coated. Set aside.
  2. Place a bamboo sushi mat on a clean surface. Lay a nori sheet on top of the mat.
  3. Wet your hands with water to prevent sticking, and evenly spread 1/2 cup of the cauliflower rice mixture onto the nori sheet, leaving a 1-inch border at the top.
  4. Arrange avocado slices, cucumber, carrot, and smoked salmon in a line across the center of the cauliflower rice.
  5. Using the sushi mat, carefully roll the nori sheet, applying gentle pressure to ensure a tight roll. Wet the top border of the nori sheet with water to seal the roll.
  6. Repeat steps 2-5 with the remaining nori sheets and filling ingredients.
  7. Once all the rolls are assembled, use a sharp knife to slice each roll into bite-sized pieces.
  8. In a small bowl, mix together the mayonnaise, sriracha sauce, and soy sauce to make the spicy mayo.
  9. Serve the cauliflower rice sushi rolls with spicy mayo on the side for dipping.
