  • 4 sheets of nori seaweed
  • 1 avocado, sliced
  • 1/2 cucumber, julienned
  • 1/2 carrot, julienned
  • 4-6 cooked shrimp, sliced in half lengthwise
  • Soy sauce, for dipping

Note: You can find nori seaweed, rice vinegar, and soy sauce in the international section of your local grocery store.

Cooking Instructions:

  1. Start by preparing the cauliflower rice. Cut the cauliflower into florets and pulse them in a food processor until they resemble rice grains. You can also use a grater if you don't have a food processor.
  2. Transfer the cauliflower rice to a microwave-safe bowl and microwave for 5 minutes to soften it slightly. This step will help remove excess moisture from the cauliflower.
  3. In a small bowl, mix together the rice vinegar, sugar, and salt until the sugar and salt dissolve. Pour this mixture over the cauliflower rice and toss until well coated. Set aside to marinate for 10 minutes.
  4. Lay a sheet of nori seaweed on a bamboo sushi mat or a clean kitchen towel. Spread a thin layer of cauliflower rice over the nori, leaving about an inch of space at the top.
  5. Arrange the avocado slices, cucumber, carrot, and shrimp in a line across the center of the cauliflower rice.
  6. Using the sushi mat or towel, carefully roll the nori tightly, applying gentle pressure to keep the filling in place. Wet the top inch of the nori with water to seal the roll.
  7. Repeat the process with the remaining nori sheets and filling ingredients.
  8. Once all the rolls are assembled, use a sharp knife to slice them into bite-sized pieces.
  9. Serve the cauliflower rice sushi rolls with soy sauce for dipping.
