- 1 medium cauliflower head, cut into florets
- 1 cup shredded cheddar cheese (113 grams)
- 1/4 cup grated Parmesan cheese (22 grams)
- 1/4 cup finely chopped onion (40 grams)
- 1/4 cup chopped fresh parsley (15 grams)
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon dried oregano
- 2 large eggs, beaten
- 1/2 cup breadcrumbs (58 grams)
- Cooking spray
Special note: You can easily make this recipe vegan by using vegan cheese and replacing the eggs with a flaxseed or chia seed egg substitute.
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
- In a food processor, pulse the cauliflower florets until they resemble rice-like grains.
- Transfer the cauliflower rice to a microwave-safe bowl and cover with a microwave-safe plate. Microwave on high for 5 minutes to soften the cauliflower.
- Remove the bowl from the microwave and let it cool for a few minutes. Once cooled, use a clean kitchen towel to squeeze out any excess moisture from the cauliflower.
- In a large mixing bowl, combine the cauliflower rice, shredded cheddar cheese, grated Parmesan cheese, chopped onion, chopped parsley, minced garlic, salt, black pepper, paprika, dried oregano, and beaten eggs. Mix until well combined.
- Add the breadcrumbs to the cauliflower mixture and stir until evenly distributed.
- Take a tablespoon of the mixture and shape it into a small tot. Place the tot on the prepared baking sheet. Repeat with the remaining mixture, leaving a little space between each tot.
- Lightly spray the tots with cooking spray to help them brown and become crispy.
- Bake in the preheated oven for 20-25 minutes, or until the tots are golden brown and crispy.
- While the tots are baking, prepare the spicy ketchup by combining 1/2 cup of ketchup with 1/2 teaspoon of hot sauce in a small bowl. Stir until well mixed.
- Serve the cauliflower tots hot with the spicy ketchup on the side for dipping.
These Cauliflower Tots with Spicy Ketchup are perfect for parties, game nights, or as a tasty appetizer for any occasion. You can also enjoy them as a side dish with your favorite main course. Serve them alongside a fresh salad or roasted vegetables for a complete meal. Enjoy the crispy texture and spicy kick of these delicious tots!
