  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Cooking Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5 minutes, until they are tender but still firm. Drain and set aside.
  3. In a separate saucepan, melt the butter over medium heat. Add the flour and whisk until well combined to form a roux.
  4. Gradually pour in the milk, whisking constantly to prevent lumps from forming. Cook the mixture for about 5 minutes, until it thickens and becomes smooth.
  5. Reduce the heat to low. Add the cheddar cheese, Parmesan cheese, garlic powder, onion powder, and nutmeg. Stir until the cheeses melt and the sauce is creamy. Season with salt and black pepper to taste.
  6. Add the cooked cauliflower to the cheese sauce and gently toss to coat each floret evenly.
  7. Transfer the cauliflower mixture to a greased baking dish and spread it out in an even layer.
  8. Bake in the preheated oven for 20-25 minutes, until the cauliflower is tender and the top is golden and bubbly.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
