  • 1 teaspoon (2 g) ground coriander
  • 1/2 teaspoon (1 g) turmeric
  • 1/4 teaspoon (0.5 g) cayenne pepper (adjust to taste)
  • 1 can (15 oz/425 g) chickpeas, drained and rinsed
  • 1 can (14 oz/400 g) diced tomatoes
  • 1 cup (240 ml) vegetable broth
  • 1 cup (240 ml) coconut milk
  • 2 cups (300 g) mixed vegetables of your choice (e.g., bell peppers, carrots, peas)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Cooked rice or naan bread, for serving

Cooking Instructions

  1. Heat the vegetable oil in a large pot or skillet over medium heat.
  2. Add the chopped onion and minced garlic to the pot, and sauté until the onion becomes translucent and fragrant.
  3. Stir in the curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for another minute to toast the spices and enhance their flavors.
  4. Add the drained and rinsed chickpeas to the pot, along with the diced tomatoes, vegetable broth, and coconut milk. Stir well to combine all the ingredients.
