  • 1 tablespoon (15ml) vegetable oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon (15ml) curry powder
  • 1 teaspoon (5ml) ground cumin
  • 1/2 teaspoon (2.5ml) turmeric powder
  • 1/4 teaspoon (1.25ml) cayenne pepper (adjust according to heat preference)
  • 1 red bell pepper, thinly sliced
  • 1 carrot, thinly sliced
  • 1 can (13.5oz/400ml) coconut milk
  • 4 cups (960ml) vegetable broth
  • 8 ounces (225g) firm tofu, cubed
  • 4 ounces (115g) rice noodles
  • 2 tablespoons (30ml) soy sauce
  • 1 tablespoon (15ml) lime juice
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Cooking Instructions:

  1. Heat the vegetable oil in a large pot over medium heat. Add the diced onion and minced garlic, and sauté for about 5 minutes until the onion becomes translucent and fragrant.
  2. Add the curry powder, cumin, turmeric, and cayenne pepper to the pot. Stir well to coat the onions and garlic with the spices, and cook for an additional minute.
  3. Add the sliced bell pepper and carrot to the pot, and cook for another 5 minutes until the vegetables start to soften.
  4. Pour in the coconut milk and vegetable broth, and bring the soup to a simmer. Let it cook for about 10 minutes to allow the flavors to meld together.
  5. While the soup is simmering, prepare the rice noodles according to the package instructions. Drain and set aside.
  6. Add the cubed tofu to the pot, and let it simmer for another 5 minutes until heated through.
  7. Stir in the soy sauce and lime juice. Taste the soup and season with salt and pepper as needed.
  8. To serve, divide the rice noodles among bowls and ladle the hot soup over them. Garnish with fresh cilantro and serve with lime wedges on the side.
