  • 1 can (13.5 oz) coconut milk
  • 4 cups (960 ml) vegetable broth
  • 1 block (14 oz) firm tofu, cubed
  • 2 cups (240 g) sliced mixed vegetables (carrots, bell peppers, snow peas)
  • 8 oz (225 g) rice noodles
  • 2 tablespoons (30 ml) soy sauce
  • 1 tablespoon (15 ml) lime juice
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Cooking Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.
  2. Add the curry powder and ground turmeric to the pot, stirring well to coat the onions and garlic in the spices. Cook for an additional minute to toast the spices.
  3. Pour in the coconut milk and vegetable broth, stirring to combine. Bring the mixture to a simmer.
  4. Add the cubed tofu and sliced mixed vegetables to the pot. Cook for about 10 minutes, until the vegetables are tender and the tofu is heated through.
  5. Meanwhile, cook the rice noodles according to the package instructions. Drain and set aside.
