  • 1/2 teaspoon (2.5ml) turmeric
  • 1/4 teaspoon (1.25ml) cayenne pepper (adjust to taste)
  • 1 can (14 ounces/400ml) coconut milk
  • 1 cup (240ml) vegetable broth
  • 1 cup (150g) diced carrots
  • 1 cup (150g) diced bell peppers
  • 1 cup (150g) diced zucchini
  • 1 cup (150g) diced potatoes
  • 1 cup (150g) frozen peas
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Cooking Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until the onion becomes translucent.
  2. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper to the pot. Stir well to coat the onions and garlic with the spices.
  3. Pour in the coconut milk and vegetable broth. Stir to combine all the ingredients.
  4. Add the diced carrots, bell peppers, zucchini, and potatoes to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, or until the vegetables are tender.
