Ingredients

  • 8 ounces (225g) of firm tofu, drained and pressed
  • 8 ounces (225g) of rice noodles
  • 2 tablespoons (30ml) of vegetable oil, divided
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1 cup (150g) of snap peas, trimmed
  • 1 cup (100g) of bean sprouts
  • 2 tablespoons (30ml) of soy sauce
  • 1 tablespoon (15ml) of hoisin sauce
  • 1 tablespoon (15ml) of rice vinegar
  • 1 tablespoon (15ml) of sesame oil
  • 1 tablespoon (15ml) of sesame seeds, for garnish
  • Fresh cilantro, for garnish

Cooking Instructions

  1. Start by preparing the tofu. Cut the tofu into cubes or strips, whichever you prefer. In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the tofu and cook until golden brown and crispy on all sides, about 5-7 minutes. Set aside.
  2. Cook the rice noodles according to the package instructions. Drain and set aside.
  3. In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  4. Add the sliced bell pepper, julienned carrot, snap peas, and bean sprouts. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and sesame oil. Pour the sauce over the vegetables and tofu in the skillet. Stir to coat everything evenly.
  6. Add the cooked rice noodles to the skillet and toss well to combine with the vegetables and sauce. Cook for an additional 2-3 minutes until everything is heated through.
  7. Remove from heat and garnish with sesame seeds and fresh cilantro.
