  • 1 package extra firm tofu, drained and pressed (454g)
  • 1/4 cup cornstarch (30g)
  • 1 teaspoon chili powder (5g)
  • 1/2 teaspoon cumin (2.5g)
  • 1/2 teaspoon garlic powder (2.5g)
  • 1/2 teaspoon salt (2.5g)
  • 1/4 teaspoon black pepper (1.25g)
  • 2 tablespoons vegetable oil (30ml)
  • 8 small tortillas
  • 1 cup shredded lettuce (70g)
  • 1/2 cup diced tomatoes (80g)
  • 1/4 cup diced red onion (40g)
  • 1/4 cup chopped cilantro (10g)
  • 1 ripe mango, peeled and diced
  • 1 jalapeno, seeded and minced
  • Juice of 1 lime
  • Salt to taste

Cooking Instructions

  1. Preheat your oven to 400°F (200°C).

  2. Cut the pressed tofu into small cubes.

  3. In a shallow bowl, combine the cornstarch, chili powder, cumin, garlic powder, salt, and black pepper.

  4. Toss the tofu cubes in the cornstarch mixture until they are evenly coated.

  5. In a large skillet, heat the vegetable oil over medium-high heat.

  6. Add the tofu cubes to the skillet and cook for about 5 minutes, flipping occasionally, until they are golden brown and crispy.
