  • 1 large eggplant, diced (about 4 cups) (450g)
  • 1 medium onion, finely chopped (1 cup) (150g)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup tomato paste (60g)
  • 1/4 cup red wine vinegar (60ml)
  • 2 tablespoons capers, drained
  • 2 tablespoons chopped green olives
  • 2 tablespoons raisins
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon sugar
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil, divided

Cooking Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced eggplant and cook until browned and tender, about 10 minutes. Remove the eggplant from the skillet and set aside.

  2. In the same skillet, add the remaining tablespoon of olive oil and sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

  3. Return the cooked eggplant to the skillet and stir in the diced tomatoes, tomato paste, red wine vinegar, capers, green olives, raisins, chopped parsley, sugar, dried oregano, and red pepper flakes (if using). Season with salt and pepper to taste.

  4. Reduce the heat to low and simmer the mixture for 25-30 minutes, stirring occasionally, until the flavors meld together and the caponata thickens slightly.

  5. Remove the skillet from the heat and allow the caponata to cool to room temperature. This dish is best served chilled, so you can refrigerate it for at least 1 hour or overnight before serving.
