Ingredients

  • 2 large eggplants
  • 1 cup ricotta cheese (240g)
  • 1/2 cup grated Parmesan cheese (50g)
  • 1/4 cup chopped fresh basil (15g)
  • 2 cloves garlic, minced
  • 1 cup marinara sauce (240ml)
  • 1/2 cup shredded mozzarella cheese (60g)
  • Salt and pepper to taste
  • Olive oil for brushing
  • Fresh basil leaves for garnish

Cooking Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants lengthwise into thin strips, about 1/4 inch thick.
  3. Lay the eggplant slices on a baking sheet and brush both sides with olive oil. Season with salt and pepper.
  4. Place the eggplant slices in the oven and bake for 10-12 minutes until they become tender and pliable. Remove from the oven and set aside.
  5. In a bowl, combine the ricotta cheese, Parmesan cheese, chopped basil, and minced garlic. Mix well until all the ingredients are evenly incorporated.
  6. Spread a spoonful of marinara sauce on the bottom of a baking dish.
  7. Take each eggplant slice and spread a generous spoonful of the ricotta mixture onto one end. Roll up the eggplant slice tightly and place it seam-side down in the baking dish.
  8. Repeat this process with the remaining eggplant slices and ricotta mixture.
  9. Pour the remaining marinara sauce over the rolled eggplants, making sure they are evenly covered.
  10. Sprinkle the shredded mozzarella cheese on top.
  11. Cover the baking dish with aluminum foil and bake for 25 minutes.
  12. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  13. Once done, remove from the oven and let it cool for a few minutes.
  14. Garnish with fresh basil leaves before serving.
