  • 2 large eggplants

  • 2 cups marinara sauce

Cooking Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants lengthwise into 1/4-inch thick slices. Sprinkle salt on both sides of each slice and let them sit for about 15 minutes to draw out excess moisture. Rinse the slices under cold water and pat them dry with paper towels.
  3. Brush both sides of the eggplant slices with olive oil and place them on a baking sheet. Bake in the preheated oven for about 15 minutes, or until the slices are tender and slightly golden.

  9. Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
