Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese

  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/4 cup sliced black olives
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Note: You can adjust the spice level by adding more or less chili powder.

Cooking Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and cook until they become tender, about 5 minutes.
  3. Add the shredded chicken to the skillet and sprinkle with chili powder, cumin, salt, and pepper. Stir well to coat the chicken with the spices.

  7. Sprinkle the remaining cheese on top of the chicken mixture. Add the sliced black olives as well.

  9. Once done, remove the casserole from the oven and let it cool for a few minutes.
  10. Garnish with chopped fresh cilantro before serving.
