  • 2 cups almond flour (240g)
  • 1/4 cup coconut flour (30g)
  • 1/4 cup granulated erythritol sweetener (50g)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup melted coconut oil (60ml)
  • 1/4 cup unsweetened almond milk (60ml)
  • 3 large eggs
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon poppy seeds

Special Notes: You can adjust the sweetness of the muffins by adding more or less erythritol sweetener according to your taste preference. Feel free to use any other keto-friendly sweetener of your choice.

Cooking Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with coconut oil.
  2. In a large mixing bowl, whisk together the almond flour, coconut flour, erythritol sweetener, baking powder, and salt.
  3. In a separate bowl, whisk together the melted coconut oil, unsweetened almond milk, eggs, lemon juice, and lemon zest.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. Don't overmix.
