  • 2 celery stalks, diced
  • 3 cloves of garlic, minced
  • 1 teaspoon (5g) dried thyme
  • 1 teaspoon (5g) dried rosemary
  • 1 teaspoon (5g) paprika
  • 1 can (14 ounces/400g) diced tomatoes
  • 1 cup (240ml) vegetable broth
  • 2 cups (300g) frozen mixed vegetables
  • Salt and pepper, to taste
  • 4 cups (800g) mashed potatoes
  • Fresh parsley, for garnish

Cooking Instructions

  1. In a large pot, cook the lentils according to the package instructions. Drain and set aside.
  2. Preheat the oven to 375°F (190°C).
  3. In a separate large skillet, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until they begin to soften, about 5 minutes.
  4. Add the minced garlic, dried thyme, dried rosemary, and paprika to the skillet. Cook for an additional 2 minutes, stirring occasionally.
  5. Stir in the diced tomatoes and vegetable broth. Bring the mixture to a simmer and let it cook for 10 minutes, allowing the flavors to meld together.
  6. Add the cooked lentils and frozen mixed vegetables to the skillet. Season with salt and pepper to taste. Cook for another 5 minutes, until the vegetables are heated through.
  7. Transfer the lentil and vegetable mixture to a baking dish. Spread the mashed potatoes evenly over the top.
  8. Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the mashed potatoes are golden and the filling is bubbling.
