  • 1/2 cup Kalamata olives, pitted and sliced (75g)
  • 1/2 cup crumbled feta cheese (75g)
  • 1/4 cup fresh parsley, chopped (15g)
  • 2 tablespoons extra virgin olive oil (30ml)
  • 1 tablespoon lemon juice (15ml)
  • Salt and pepper, to taste

Cooking Instructions:

  1. In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is tender and the liquid is absorbed.
  2. Once cooked, remove the quinoa from the heat and let it cool for a few minutes.
  3. In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and fresh parsley.
  4. In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper. Pour the dressing over the quinoa salad and toss gently to combine.
