  • 2 cups (480 ml) vegetable broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 4 cups (800 grams) mashed potatoes
  • Fresh parsley, for garnish

Cooking Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent and fragrant.
  3. Add the sliced cremini mushrooms, button mushrooms, carrot, and celery to the skillet. Cook for about 5 minutes, or until the mushrooms have released their moisture and become tender.
  4. Stir in the dried lentils, vegetable broth, tomato paste, dried thyme, dried rosemary, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the lentils are cooked and most of the liquid has been absorbed.
