Mushroom and Spinach Lasagna

  • 9 lasagna noodles
  • 2 tablespoons olive oil (30 ml)
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 8 ounces mushrooms, sliced (225 g)
  • 4 cups fresh spinach (120 g)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups ricotta cheese (450 g)
  • 1/2 cup grated Parmesan cheese (50 g)
  • 2 cups shredded mozzarella cheese (225 g)
  • 2 cups marinara sauce (480 ml)
  • Fresh basil leaves, for garnish

Cooking Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.
  4. Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender.
  5. Add the fresh spinach to the skillet and cook until wilted. Season with dried basil, dried oregano, salt, and black pepper. Stir well to combine.
  6. In a separate bowl, mix together the ricotta cheese and grated Parmesan cheese.
  7. Spread a thin layer of marinara sauce in the bottom of a baking dish. Place three lasagna noodles on top.
  8. Spread half of the ricotta cheese mixture over the noodles, followed by half of the mushroom and spinach mixture. Sprinkle with shredded mozzarella cheese.
  9. Repeat the layers with marinara sauce, lasagna noodles, ricotta cheese mixture, mushroom and spinach mixture, and shredded mozzarella cheese.
  10. Finish with a layer of marinara sauce and shredded mozzarella cheese on top.
  11. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  12. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  13. Let the lasagna cool for a few minutes before serving. Garnish with fresh basil leaves.
