  • 1 ¾ cups (220g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (1 stick or 113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) strong brewed coffee, cooled
  • 1 teaspoon peppermint extract
  • 1 cup (240ml) heavy cream
  • ¼ cup (30g) powdered sugar
  • Crushed candy canes, for garnish

Cooking Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners and set aside.

  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  4. In a separate bowl, combine the milk, cooled coffee, and peppermint extract. Gradually add the dry ingredients to the butter mixture, alternating with the milk mixture. Begin and end with the dry ingredients, mixing until just combined.

  5. Fill each cupcake liner about two-thirds full with the batter. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow the cupcakes to cool completely on a wire rack.

  6. While the cupcakes are cooling, prepare the frosting. In a chilled mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.
