  • 1 cup cooked quinoa (185g)
  • 1 can black beans, drained and rinsed (15 oz)
  • 1/2 cup breadcrumbs (60g)
  • 1/4 cup finely chopped red onion (30g)
  • 1/4 cup finely chopped bell pepper (30g)
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water (or use 1 egg if not vegan)
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil, for cooking

Cooking Instructions

  1. In a large mixing bowl, mash the black beans with a fork until they are mostly mashed but still have some whole beans remaining.
  2. Add the cooked quinoa, breadcrumbs, red onion, bell pepper, garlic, cilantro, flaxseed mixture (or egg), cumin, smoked paprika, salt, and black pepper to the bowl. Mix everything together until well combined.
  3. Shape the mixture into patties, about 1/2 inch thick. This recipe should make about 4 patties.
  4. Heat a drizzle of olive oil in a skillet over medium heat. Once the oil is hot, add the patties to the skillet. Cook for about 4-5 minutes on each side, or until they are golden brown and crispy.
