  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 small zucchini, thinly sliced
  • 1 cup broccoli florets (100 g)
  • 1 cup snap peas (100 g)
  • 1 cup sliced mushrooms (100 g)
  • 1 cup shredded carrots (100 g)
  • 1/2 cup chopped green onions (50 g)
  • Salt and pepper, to taste

Cooking Instructions

  1. In a medium-sized saucepan, combine the quinoa and vegetable broth. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low and cover the saucepan. Simmer for 15-20 minutes, or until the quinoa is tender and the liquid is absorbed.
  3. While the quinoa is cooking, heat the sesame oil and olive oil in a large skillet or wok over medium heat.
  4. Add the minced garlic to the skillet and sauté for 1-2 minutes, until fragrant.
  5. Add the sliced bell peppers, zucchini, broccoli florets, snap peas, mushrooms, and shredded carrots to the skillet. Stir-fry for 5-7 minutes, or until the vegetables are tender-crisp.
