Ingredients

  • 4 bell peppers (any color)
  • 1 cup (180g) quinoa, cooked
  • 1 tablespoon (15ml) olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 carrot, grated
  • 1 cup (150g) cherry tomatoes, halved
  • 1 teaspoon (5g) dried oregano
  • 1 teaspoon (5g) dried basil
  • 1/2 teaspoon (3g) salt
  • 1/4 teaspoon (1g) black pepper
  • 1 cup (120g) shredded cheese (such as mozzarella or cheddar)

Cooking Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice off the tops of the bell peppers and remove the seeds and membranes from the inside. Place the peppers in a baking dish and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.
  4. Add the diced zucchini and grated carrot to the skillet. Cook for about 5 minutes, or until the vegetables have softened.
  5. Stir in the cooked quinoa, cherry tomatoes, dried oregano, dried basil, salt, and black pepper. Cook for another 2-3 minutes, allowing the flavors to meld together.
  6. Spoon the quinoa and vegetable mixture into the hollowed-out bell peppers, packing them tightly. Top each pepper with a generous amount of shredded cheese.
  7. Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the peppers are tender.
  8. Once cooked, remove the stuffed bell peppers from the oven and let them cool for a few minutes before serving.
