  • 4 large bell peppers (any color)
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 carrot, grated
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Note: Feel free to add other vegetables or spices according to your taste preferences.

Cooking Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.
  3. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil over high heat. Reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the liquid is absorbed.
  4. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
  5. Add the zucchini, carrot, diced tomatoes, dried oregano, dried basil, salt, and black pepper to the skillet. Cook for 5 minutes or until the vegetables are tender.
  6. Remove the skillet from heat and stir in the cooked quinoa. Mix well to combine all the ingredients.
  7. Spoon the quinoa mixture into the bell peppers, filling them to the top. Sprinkle shredded mozzarella cheese over each pepper.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and golden.
  9. Remove the stuffed bell peppers from the oven and let them cool for a few minutes. Garnish with fresh parsley.
