  • 4 bell peppers (any color)
  • 1 cup cooked quinoa
  • 1/2 pound ground turkey (226g)
  • 1/2 cup onion, diced (75g)
  • 1/2 cup zucchini, diced (75g)
  • 1/2 cup corn kernels (75g)
  • 1/2 cup black beans, rinsed and drained (75g)
  • 1/2 cup shredded cheddar cheese (57g)
  • 1/4 cup tomato sauce (60ml)
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Cooking Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers upright in a baking dish.
  3. In a large skillet, cook the ground turkey over medium heat until browned. Add the diced onion and zucchini, and cook until softened.
  4. Add the cooked quinoa, corn kernels, black beans, tomato sauce, garlic powder, cumin, paprika, salt, and pepper to the skillet. Stir well to combine all the ingredients.
  5. Spoon the quinoa filling into each bell pepper, packing it tightly.
  6. Sprinkle shredded cheddar cheese on top of each stuffed bell pepper.
  7. Cover the baking dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the bell peppers are tender and the cheese is melted and lightly browned.
  9. Garnish with fresh cilantro before serving.
