  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 8 small tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Cooking Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the cauliflower florets, olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Toss until the cauliflower is evenly coated with the spices.
  3. Spread the cauliflower out in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until the cauliflower is tender and lightly browned.
  4. While the cauliflower is roasting, warm the tortillas in a dry skillet over medium heat. Cook for about 30 seconds on each side until they are warm and pliable. Wrap the tortillas in a clean kitchen towel to keep them warm.
  5. Once the cauliflower is done, remove it from the oven and allow it to cool slightly.
  6. To assemble the tacos, place a spoonful of the roasted cauliflower onto each tortilla. Top with shredded lettuce, diced tomatoes, diced red onion, and chopped fresh cilantro. Squeeze a wedge of lime over each taco for an extra burst of flavor.
  7. Serve the Roasted Cauliflower Tacos immediately and enjoy!
