  • 24 large button mushrooms
  • 1/2 pound (225g) ground sausage
  • 1/2 cup (75g) diced apple
  • 1/4 cup (40g) diced onion
  • 1/4 cup (30g) breadcrumbs
  • 1/4 cup (30g) grated Parmesan cheese
  • 1 tablespoon (15ml) olive oil
  • 1 teaspoon (5ml) dried thyme
  • 1/2 teaspoon (2.5ml) garlic powder
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Note: You can use any type of sausage you prefer, such as Italian sausage or breakfast sausage. Feel free to adjust the seasonings according to your taste.

Cooking Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the mushrooms and set aside. Place the mushroom caps on a baking sheet lined with parchment paper.
  3. In a skillet, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 2-3 minutes.
  4. Add the ground sausage to the skillet and cook until browned, breaking it up into small pieces with a spatula or spoon.
  5. Once the sausage is cooked, add the diced apple, reserved mushroom stems, thyme, garlic powder, salt, and pepper. Cook for an additional 2-3 minutes, until the apples are slightly softened.
  6. Remove the skillet from the heat and stir in the breadcrumbs and grated Parmesan cheese. The mixture should hold together when pressed.
  7. Spoon the sausage and apple mixture into the mushroom caps, filling each one generously.
  8. Bake the stuffed mushrooms in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
