Ingredients

  • 8 ounces (225g) of spaghetti noodles
  • 1/2 cup (120ml) of smooth peanut butter
  • 1/4 cup (60ml) of soy sauce
  • 2 tablespoons (30ml) of rice vinegar
  • 2 tablespoons (30ml) of sesame oil
  • 2 tablespoons (30ml) of maple syrup
  • 2 cloves of garlic, minced
  • 1 tablespoon (15ml) of sriracha sauce (adjust according to your spice preference)
  • 1/4 cup (60ml) of hot water
  • 1 cup (150g) of shredded carrots
  • 1/2 cup (75g) of chopped green onions
  • 1/4 cup (40g) of chopped peanuts
  • Lime wedges, for garnish
  • Fresh cilantro, for garnish

Special notes: Feel free to add other vegetables such as bell peppers or snap peas to customize your noodles. You can also substitute spaghetti noodles with rice noodles if preferred.

Cooking Instructions

  1. Cook the spaghetti noodles according to the package instructions until al dente. Drain and set aside.
  2. In a medium-sized bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup, minced garlic, sriracha sauce, and hot water until well combined. Adjust the sriracha sauce according to your desired level of spiciness.
  3. In a large skillet or wok, heat a tablespoon of sesame oil over medium heat. Add the shredded carrots and chopped green onions, and sauté for 2-3 minutes until slightly softened.
  4. Add the cooked noodles to the skillet and pour the peanut sauce over them. Toss everything together until the noodles are evenly coated with the sauce. Cook for an additional 2-3 minutes until heated through.
