  • 4 boneless, skinless chicken breasts
  • 1 cup frozen spinach, thawed and drained (240 ml)
  • 1 cup crumbled feta cheese (150 g)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil (30 ml)

Cooking Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a mixing bowl, combine the thawed and drained spinach, crumbled feta cheese, minced garlic, dried oregano, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

  3. Lay the chicken breasts flat on a cutting board. Using a sharp knife, carefully cut a pocket into each chicken breast. Make sure not to cut all the way through. The pocket should be big enough to stuff the filling.

  4. Stuff each chicken breast with the spinach and feta mixture. Press the edges of the chicken together to seal the filling inside. Season the outside of the chicken breasts with salt and pepper.

  5. Heat olive oil in an oven-safe skillet over medium-high heat. Once the oil is hot, add the stuffed chicken breasts to the skillet. Cook for 3-4 minutes on each side until they are golden brown.

  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through and no longer pink in the center. The internal temperature should reach 165°F (74°C).

  7. Remove the skillet from the oven and let the chicken rest for a few minutes before serving. This allows the juices to redistribute and keeps the chicken moist.
