  • 4 large bell peppers (any color)
  • 1 tablespoon olive oil (15 mL)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups fresh spinach leaves (120 g)
  • 1 cup crumbled feta cheese (150 g)
  • 1/4 cup grated Parmesan cheese (25 g)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • Optional: 1/4 teaspoon red pepper flakes for a spicy kick

Cooking Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the seeds and membranes. Rinse the peppers thoroughly.
  3. Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent, about 2-3 minutes.
  4. Add the fresh spinach leaves to the skillet and cook until wilted, stirring occasionally. This should take around 2-3 minutes.
  5. Remove the skillet from the heat and let the mixture cool slightly.
  6. In a large mixing bowl, combine the sautéed spinach and onion mixture with the crumbled feta cheese, grated Parmesan cheese, salt, black pepper, dried oregano, dried basil, dried thyme, and red pepper flakes (if desired). Mix until well combined.
  7. Stuff each bell pepper with the spinach and feta mixture, pressing it down gently to fill the peppers completely.
  8. Place the stuffed peppers in a baking dish and cover with aluminum foil.
  9. Bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 5 minutes, or until the peppers are tender and the cheese is golden and bubbly.
  10. Carefully remove the peppers from the oven and let them cool for a few minutes before serving.
