  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 grams) cumin powder
  • 1 teaspoon (5 grams) paprika
  • Salt and pepper to taste
  • 1 cup (120 grams) vegan cheese, shredded
  • Optional toppings: salsa, guacamole, vegan sour cream

Cooking Instructions:

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced onion and minced garlic, sauté until the onion becomes translucent and the garlic is fragrant.
  2. Add the sliced mushrooms to the skillet and cook until they start to soften and release their moisture, about 5 minutes.
  3. Stir in the chopped spinach leaves and cook until wilted, about 2-3 minutes. Season with cumin powder, paprika, salt, and pepper. Mix well to combine all the flavors.
  4. Remove the skillet from the heat and set aside.
  5. Place a tortilla on a clean surface and sprinkle a handful of vegan cheese evenly over half of the tortilla. Spoon a generous amount of the spinach and mushroom mixture on top of the cheese.
