  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cooked quinoa
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, for garnish

Cooking Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half lengthwise and scoop out the seeds. Place them cut-side up on a baking sheet.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.
  4. Add the red bell pepper and zucchini to the skillet, and cook for another 5 minutes until they start to soften.
  5. Stir in the cooked quinoa, dried cranberries, chopped pecans, dried thyme, salt, and black pepper. Cook for an additional 2 minutes to allow the flavors to meld together.
  6. Spoon the quinoa mixture into the hollowed-out acorn squashes, dividing it evenly among them.
  7. Sprinkle grated Parmesan cheese on top of each stuffed squash, if desired.
  8. Place the baking sheet with the stuffed squashes in the preheated oven and bake for about 45-50 minutes, or until the squash is tender and easily pierced with a fork.
  9. Once cooked, remove the stuffed squashes from the oven and let them cool for a few minutes.
  10. Garnish with fresh parsley before serving.
