  • 2 acorn squashes
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cooked quinoa
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, for garnish

Cooking Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squashes in half lengthwise and scoop out the seeds. Place them cut-side up on a baking sheet.
  3. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent.
  4. Add the red bell pepper and zucchini to the skillet, and cook for another 5 minutes until they start to soften.
