  • 1 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • 8 small flour tortillas
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese

Cooking Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and cook for about 5 minutes, until they begin to soften.
  3. Add the diced red onion, red bell pepper, and minced garlic to the skillet. Cook for an additional 5 minutes, until the vegetables are tender.
  4. Stir in the black beans, cumin, chili powder, smoked paprika, salt, and pepper. Cook for another 2 minutes to allow the flavors to meld together.
  5. Warm the flour tortillas in the microwave for a few seconds to make them pliable. Spoon about 1/4 cup of the sweet potato and black bean mixture onto each tortilla. Roll them up tightly and place them seam-side down in a greased baking dish.
