  • 2 sweet potatoes, peeled and cubed (450g)
  • 1 can of chickpeas, drained and rinsed (15 oz)
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can of coconut milk (13.5 oz)
  • 2 tablespoons of curry powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of turmeric
  • 1/4 teaspoon of cayenne pepper (optional for extra heat)
  • Salt and pepper to taste
  • 2 tablespoons of vegetable oil
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan bread (for serving)

Cooking Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes.
  2. Add the minced garlic, diced red bell pepper, curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper (if using) to the pot. Stir well to combine and cook for another 2 minutes.
  3. Add the cubed sweet potatoes and drained chickpeas to the pot. Season with salt and pepper to taste. Stir everything together until the sweet potatoes and chickpeas are coated with the spices.
  4. Pour in the coconut milk and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20-25 minutes, or until the sweet potatoes are tender. Stir occasionally to prevent sticking.
