  • 1 can (14 ounces) diced tomatoes
  • 1 cup vegetable broth
  • 1/2 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Cooking Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes.
  2. Add the minced garlic and grated ginger to the pot. Cook for an additional 1-2 minutes, until fragrant.
  3. Sprinkle in the curry powder, ground cumin, ground turmeric, and cayenne pepper (if using). Stir well to coat the onion mixture with the spices.
  4. Add the cubed sweet potatoes, chickpeas, diced tomatoes (with their juice), vegetable broth, and coconut milk to the pot. Season with salt and pepper to taste.
