  • 1 red bell pepper, diced
  • 1 can (15 ounces/425g) chickpeas, drained and rinsed
  • 1 can (14 ounces/400g) diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

Cooking Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and minced garlic, sauté until fragrant and translucent, about 3-4 minutes.
  2. Add the cubed sweet potatoes and diced red bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Stir in the drained chickpeas, diced tomatoes, vegetable broth, ground cumin, smoked paprika, dried thyme, salt, and pepper. Bring the mixture to a boil.
