  • 1 pound breakfast sausage, casings removed (450g)
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 4 large eggs
  • Fresh parsley, for garnish

Cooking Instructions

  1. In a large skillet, cook the breakfast sausage over medium heat, breaking it up into small pieces with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  2. In the same skillet, add the diced sweet potatoes and cook over medium heat until they are tender and slightly browned, about 10-12 minutes. Stir occasionally to prevent sticking.
