Ingredients

  • 2 large sweet potatoes, peeled and diced (450g)
  • 1 pound breakfast sausage, casings removed (450g)
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 4 large eggs
  • Fresh parsley, for garnish

Cooking Instructions

  1. In a large skillet, cook the breakfast sausage over medium heat, breaking it up into small pieces with a spoon. Cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  2. In the same skillet, add the diced sweet potatoes and cook over medium heat until they are tender and slightly browned, about 10-12 minutes. Stir occasionally to prevent sticking.
  3. Add the diced onion, red bell pepper, and minced garlic to the skillet. Cook for an additional 5 minutes, until the vegetables are softened.
  4. Return the cooked sausage to the skillet and stir in the paprika, dried thyme, salt, and pepper. Cook for another 2-3 minutes to allow the flavors to meld together.
  5. Make four wells in the hash mixture and crack an egg into each well. Cover the skillet with a lid and cook for about 5 minutes, or until the eggs are cooked to your desired level of doneness.
  6. Remove the skillet from the heat and garnish with fresh parsley. Serve the sweet potato hash with sausage and eggs hot.
