  • 2 celery stalks, finely chopped
  • 4 garlic cloves, minced
  • 1 red bell pepper, finely chopped
  • 8 ounces (225 grams) mushrooms, finely chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 can (14 ounces/400 grams) crushed tomatoes
  • 1 can (14 ounces/400 grams) diced tomatoes
  • 1 tablespoon tomato paste
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce (or tamari for gluten-free option)
  • 2 tablespoons nutritional yeast (optional, for a cheesy flavor)
  • Salt and pepper, to taste
  • 12 ounces (340 grams) spaghetti (or pasta of your choice)
  • Fresh basil leaves, for garnish

Cooking Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, carrots, celery, and garlic. Sauté for 5 minutes, or until the vegetables are softened.

  2. Add the red bell pepper, mushrooms, dried oregano, dried basil, dried thyme, and red pepper flakes. Cook for another 5 minutes, stirring occasionally.

  3. Stir in the crushed tomatoes, diced tomatoes, tomato paste, vegetable broth, soy sauce, and nutritional yeast (if using). Season with salt and pepper to taste. Bring the mixture to a simmer and let it cook for 30 minutes to allow the flavors to meld together.

  4. While the sauce is simmering, cook the spaghetti according to the package instructions until al dente. Drain and set aside.

  5. Once the sauce has thickened and the flavors have developed, remove it from the heat. Use an immersion blender or a regular blender to blend the sauce until smooth, or leave it chunky if you prefer.

  6. Serve the Vegan Bolognese sauce over the cooked spaghetti. Garnish with fresh basil leaves for an extra burst of flavor.
