  • 1 cup cooked lentils (200 g)
  • 1 can crushed tomatoes (400 g)
  • 2 tablespoons tomato paste (30 g)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 8 oz spaghetti (225 g), cooked according to package instructions
  • Fresh basil leaves, for garnish

Cooking Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5 minutes until the vegetables start to soften.

  2. Add the minced garlic, red bell pepper, and zucchini to the skillet. Cook for an additional 5 minutes, stirring occasionally.

  3. Stir in the cooked lentils, crushed tomatoes, tomato paste, dried basil, dried oregano, salt, and pepper. Reduce the heat to low and simmer for 30 minutes, allowing the flavors to meld together.

  4. While the sauce simmers, cook the spaghetti according to the package instructions. Drain and set aside.
