  • 1 teaspoon (2 g) ground coriander
  • 1/2 teaspoon (1 g) turmeric
  • 1/4 teaspoon (0.5 g) cayenne pepper (adjust according to your spice preference)
  • 1 can (15 ounces/425 g) chickpeas, drained and rinsed
  • 1 can (14 ounces/400 ml) coconut milk
  • 1 cup (240 ml) vegetable broth
  • 1 cup (150 g) diced tomatoes (canned or fresh)
  • 2 cups (60 g) baby spinach
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Cooking Instructions

  1. Heat the olive oil in a large skillet or pot over medium heat.
