  • 1 can (15 ounces/425 g) chickpeas, drained and rinsed
  • 1 can (14 ounces/400 ml) coconut milk
  • 1 cup (240 ml) vegetable broth
  • 1 cup (150 g) diced tomatoes (canned or fresh)
  • 2 cups (60 g) baby spinach
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Cooking Instructions

  1. Heat the olive oil in a large skillet or pot over medium heat.
  2. Add the chopped onion and minced garlic to the skillet, and sauté until the onion turns translucent and slightly golden brown, about 5 minutes.
