  • 8 ounces (226g) rice noodles
  • 2 tablespoons (30ml) vegetable oil
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cup (150g) bean sprouts
  • 1/2 cup (75g) chopped roasted peanuts
  • 2 green onions, sliced
  • Lime wedges, for serving

For the sauce:

  • 1/4 cup (60ml) soy sauce
  • 2 tablespoons (30ml) maple syrup
  • 2 tablespoons (30ml) rice vinegar
  • 1 tablespoon (15ml) lime juice
  • 1 tablespoon (15ml) sriracha sauce (optional for spicy lovers)

Cooking Instructions

  1. Cook the rice noodles according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the onion and garlic, and sauté until fragrant and translucent.
  3. Add the red bell pepper and carrot to the skillet, and cook for 3-4 minutes until slightly softened.
  4. In a small bowl, whisk together the soy sauce, maple syrup, rice vinegar, lime juice, and sriracha sauce (if using) to make the sauce.
  5. Push the veggies to one side of the skillet and pour the sauce into the empty space. Let it simmer for a minute until slightly thickened.
  6. Add the cooked rice noodles, bean sprouts, and half of the chopped peanuts to the skillet. Toss everything together until well coated in the sauce and heated through.
  7. Remove from heat and garnish with the remaining chopped peanuts and sliced green onions.
  8. Serve hot with lime wedges on the side for an extra tangy kick.
