Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 cup diced tomatoes (240 ml)
  • 1 cup vegetable broth (240 ml)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • 1 teaspoon dried thyme
  • 1 cup Arborio rice (200 grams)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Cooking Instructions

  1. Heat the olive oil in a large paella pan or skillet over medium heat.
  2. Add the diced onion and minced garlic to the pan. Sauté until the onion becomes translucent and fragrant.
  3. Add the diced red and yellow bell peppers to the pan. Cook for a few minutes until they start to soften.
  4. Stir in the diced zucchini and cook for another 2-3 minutes.
  5. Add the diced tomatoes, vegetable broth, smoked paprika, saffron threads, and dried thyme to the pan. Stir well to combine.
  6. Bring the mixture to a simmer. Add the Arborio rice and stir to evenly distribute it in the pan.
  7. Reduce the heat to low and cover the pan. Allow the paella to cook for about 20-25 minutes, or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
  8. Season with salt and pepper to taste.
  9. Remove the pan from heat and let it sit, covered, for about 5 minutes to allow the flavors to meld.
  10. Garnish with fresh chopped parsley before serving.
