  • 2 cups grated zucchini (240 grams)
  • 2 cups gluten-free flour blend
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/2 cup honey
  • 1/4 cup coconut oil, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Note: If you don't have gluten-free flour blend, you can substitute it with an equal amount of all-purpose flour.

Cooking Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with cooking spray or line it with parchment paper.
  2. In a large bowl, combine the grated zucchini, gluten-free flour blend, baking powder, baking soda, salt, and ground cinnamon. Mix well.
  3. In a separate bowl, whisk together the unsweetened applesauce, honey, melted coconut oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Do not overmix.
  5. If desired, fold in the chopped walnuts.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
